Banana-Bran Muffins

2 large eggs
2/3 C packed light brown sugar
1 C mashed ripe bananas (2 medium)
1 C buttermilk
1 C unprocessed wheat bran
¼ C canola oil
1 tsp vanilla extract
1 C whole-wheat flour
¾ C all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ tsp cinnamon
½ C chocolate chips (optional)
1/3 C walnuts (optional)

Whisk eggs and brown sugar in a medium bowl until smooth. Whisk in bananas, buttermilk, bran, oil, and vanilla. Add remaining dry ingredients and stir until just moistened. Bake muffins at 400 degrees for 20 to 25 minutes or until tops are golden brown and spring back when touched. Makes 18.
